Travel Cookbook Find: The Enchanted Hill

The Enchanted Hill Cookbook

  

Yes, I'm about to start my alphabetical world of sweets travels, but I couldn't resist sharing this closer-to-home touristy cookbook. This rare find by Marjorie Collord and Ann Miller is an arm-chair traveler cookbook gem that is full of favorite recipes of William Randolph Hearst with “photos and inside glimpses of Hearst Castle” which is 94 miles south of Monterey, California. Of course, I am particularly drawn to the desserts. In this July heat, I am even more attracted to the easy Frozen Desserts that were favorites of Mr. Hearst like this one below:


Pineapple Sherbet

4 cups water
2 cups sugar
2 cups crushed pinapple
juice of 1 lemon
2 egg whites, beaten

Boil water and sugar for 5 minutes. Add pineapple and lemon juice. Cool and freeze to a mush. Add beaten egg whites and freeze. Makes 2 quarts.
